Ingredients
  

Potatoes
  • 4 medium russet potatoes scrubbed clean
Toppings
  • 2 tablespoons olive oil for brushing
  • 1 teaspoon sea salt for sprinkling
  • 1 cup sour cream optional topping
  • 1 cup shredded cheese optional topping
  • 1 cup chopped green onions optional topping

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Poke each potato several times with a fork to allow steam to escape.
  3. Brush each potato with olive oil and sprinkle with sea salt.
Baking
  1. Place the potatoes directly on the oven rack or on a baking sheet.
  2. Bake for 45-60 minutes, or until the skin is crispy and a fork easily pierces the flesh.
Serving
  1. Remove the potatoes from the oven and let them cool for a few minutes.
  2. Cut a slit in the top of each potato and fluff the insides with a fork.
  3. Add your favorite toppings such as sour cream, shredded cheese, and green onions.

Notes

For extra flavor, you can wrap the potatoes in aluminum foil before baking, but this will result in softer skin.
