Ingredients
  

Sweet Potatoes
  • 4 medium sweet potatoes washed and scrubbed
Olive Oil
  • 2 tablespoons olive oil optional for drizzling
Salt
  • 1 teaspoon salt to taste
Pepper
  • 1/2 teaspoon black pepper to taste

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Pierce each sweet potato several times with a fork to allow steam to escape.
  3. If desired, rub the sweet potatoes with olive oil and sprinkle with salt and pepper.
Baking
  1. Place the sweet potatoes on a baking sheet lined with aluminum foil.
  2. Bake in the preheated oven for 45-50 minutes, or until tender when pierced with a fork.
Serving
  1. Remove from the oven and let cool for a few minutes before serving.
  2. Serve as is or with your favorite toppings such as butter, cinnamon, or brown sugar.

Notes

Baked sweet potatoes can be stored in the refrigerator for up to 5 days. Reheat in the microwave or oven before serving.
