Ingredients
  

For the Banana Bars
  • 3 medium ripe bananas mashed
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
For the Cream Cheese Frosting
  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Prepare the Banana Bars
  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the mashed bananas, eggs, and vanilla extract, and mix until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the bars to cool completely in the pan on a wire rack.
Prepare the Cream Cheese Frosting
  1. In a mixing bowl, beat together the softened cream cheese and butter until smooth and creamy.
  2. Gradually add the powdered sugar and vanilla extract, mixing until well combined and fluffy.
  3. Once the banana bars are completely cooled, spread the cream cheese frosting evenly over the top.
  4. Cut into squares and serve.

Store leftover bars in an airtight container in the refrigerator for up to 5 days.
