Ingredients
  

Chicken
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 cup all-purpose flour for dredging
  • 2 large eggs beaten
  • 1 cup panko breadcrumbs for coating
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Bang Bang Sauce
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon Sriracha adjust to taste
  • 1 teaspoon lime juice
Vegetables
  • 2 cups mixed greens
  • 1 cup cucumber sliced
  • 1 cup carrots shredded
  • 1 cup red bell pepper sliced
Rice
  • 2 cups cooked rice white or brown

Method
 

Prepare the Chicken
  1. Preheat the large skillet over medium heat with a bit of oil.
  2. Season the chicken pieces with salt and pepper.
  3. Dredge each piece of chicken in flour, dip in beaten eggs, and coat with panko breadcrumbs.
  4. Fry the chicken in the skillet for about 5-7 minutes on each side or until golden brown and cooked through.
Make the Bang Bang Sauce
  1. In a mixing bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and lime juice until smooth.
Assemble the Bowls
  1. In each bowl, place a serving of cooked rice.
  2. Top with mixed greens, sliced cucumber, shredded carrots, and red bell pepper.
  3. Add the crispy chicken on top and drizzle generously with bang bang sauce.
  4. Serve immediately and enjoy!

Notes

Feel free to customize the vegetables based on your preference. You can also adjust the spiciness of the sauce by modifying the amount of Sriracha.
