  • 1/2 cup bell pepper diced
  • 1/4 cup onion diced
  • 1/4 cup spinach chopped
  • 1 tbsp olive oil for cooking
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
Egg and Avocado Toast
  • 4 large eggs poached or fried
  • 4 slices whole grain bread toasted
  • 2 medium avocados ripe
  • 1 tbsp lemon juice fresh
  • 1 tsp salt to taste
  • 1/2 tsp red pepper flakes optional
Egg Muffins
  • 6 large eggs fresh
  • 1/2 cup cheddar cheese shredded
  • 1/2 cup broccoli chopped
  • 1/4 cup milk optional
  • 1 tsp salt to taste

Method
 

Scrambled Eggs
  1. In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  2. Heat butter in a skillet over medium heat.
  3. Pour the egg mixture into the skillet and cook, stirring gently, until the eggs are just set.
  4. Serve immediately.
Vegetable Omelette
  1. In a mixing bowl, beat the eggs with salt and pepper.
  2. Heat olive oil in a skillet over medium heat.
  3. Add bell pepper, onion, and spinach to the skillet and sauté until softened.
