Method
Marinate the Chicken
- In a large bowl, combine chicken pieces with soy sauce, browning sauce, salt, black pepper, thyme, garlic, ginger, and lime juice. Mix well to coat the chicken. Cover and marinate for at least 30 minutes, preferably overnight in the refrigerator.
Cook the Chicken
- Heat vegetable oil in a large skillet over medium-high heat. Remove chicken from marinade and brown on all sides in the hot oil, about 5-7 minutes. Remove chicken and set aside.
- In the same skillet, add onion, bell pepper, scallions, and carrot. Sauté for about 5 minutes until softened.
- Add the browned chicken back to the skillet along with chicken broth, allspice, and paprika. Bring to a boil.
- Reduce heat to low, cover, and simmer for 30-40 minutes, or until chicken is cooked through and tender.
- Adjust seasoning with salt and pepper to taste before serving.
Notes
Serve with rice and peas or your favorite side dish for a complete meal.
