Ingredients
  

Casserole Base
  • 1 lb ground beef or ground turkey
  • 1 can black beans drained and rinsed
  • 1 can refried beans
  • 1 cup corn frozen or canned
  • 1 cup salsa your choice of heat
  • 1 tsp cumin
  • 1 tsp chili powder
  • 8 oz tortillas flour or corn
  • 2 cups shredded cheese cheddar or Mexican blend

Method
 

Prepare the Casserole
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  3. Add black beans, refried beans, corn, salsa, cumin, and chili powder to the skillet. Stir to combine and heat through for about 5 minutes.
  4. In a greased 9x13 inch baking dish, layer half of the tortillas on the bottom.
  5. Spread half of the beef mixture over the tortillas, then sprinkle with half of the cheese.
  6. Repeat the layers with the remaining tortillas, beef mixture, and cheese.
  7. Cover with aluminum foil and bake for 20 minutes.
  8. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  9. Let cool for a few minutes before serving.

Notes

Feel free to customize with your favorite toppings like sour cream, avocado, or jalapeños.
