Cooking Butter Beans
- Drain the soaked butter beans and rinse them under cold water.
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the drained butter beans and water to the pot.
- Bring to a boil, then reduce heat to low and simmer for about 30 minutes, or until the beans are tender.
- Season with salt, black pepper, and thyme. Stir well and cook for another 5 minutes.
- Remove from heat and let cool slightly before serving.
Notes
Serve warm as a side dish or toss with salad greens for a hearty salad.
