Marinate Chicken
- In a bowl, combine chicken pieces, soy sauce, and cornstarch. Mix well and let marinate for 15 minutes.
Prepare Sauce
- In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, and sesame oil. Set aside.
Cook Chicken
- Heat vegetable oil in a wok over medium-high heat. Add marinated chicken and stir-fry until cooked through, about 5-7 minutes.
Add Vegetables
- Add bell pepper, broccoli, and carrots to the wok. Stir-fry for another 5 minutes until vegetables are tender-crisp.
Combine and Serve
- Pour the sauce over the chicken and vegetables, add cashews, and stir to combine. Cook for an additional 2-3 minutes. Serve hot.
