Ingredients
  

Sauce Ingredients
  • 2 cups cherry tomatoes halved
  • 2 tablespoons olive oil extra virgin
  • 3 cloves garlic minced
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground
  • 1/4 teaspoon red pepper flakes optional
  • 1 tablespoon fresh basil chopped
  • 1 tablespoon fresh parsley chopped
  • 1 pound pasta spaghetti or your choice

Method
 

Prepare the Ingredients
  1. Halve the cherry tomatoes and mince the garlic.
Cook the Pasta
  1. In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside.
Make the Sauce
  1. In a large saucepan, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the halved cherry tomatoes, salt, black pepper, and red pepper flakes. Cook for about 10-15 minutes, stirring occasionally, until the tomatoes have softened and released their juices.
  4. Stir in the chopped basil and parsley, and cook for an additional 2 minutes.
Combine and Serve
  1. Add the cooked pasta to the sauce and toss to combine. Serve immediately with additional herbs or grated cheese if desired.

Notes

This sauce can be made ahead of time and stored in the refrigerator for up to 3 days. It also freezes well.
