Preparation
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine the olive oil, garlic powder, paprika, thyme, salt, and pepper.
- Add the chicken breasts to the bowl and coat them evenly with the spice mixture.
- Place the diced sweet potatoes in a baking dish and drizzle with a little olive oil, salt, and pepper.
Cooking
- Nestle the seasoned chicken breasts on top of the sweet potatoes in the baking dish.
- Pour the chicken broth around the chicken and sweet potatoes.
- Cover the baking dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
- Let it rest for 5 minutes before serving.
