Ingredients
  

Chicken and Sweet Potatoes
  • 4 pieces chicken breasts boneless and skinless
  • 2 medium sweet potatoes peeled and diced
  • 2 tablespoons olive oil for drizzling
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 cup chicken broth low sodium

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the olive oil, garlic powder, paprika, thyme, salt, and pepper.
  3. Add the chicken breasts to the bowl and coat them evenly with the spice mixture.
  4. Place the diced sweet potatoes in a baking dish and drizzle with a little olive oil, salt, and pepper.
Cooking
  1. Nestle the seasoned chicken breasts on top of the sweet potatoes in the baking dish.
  2. Pour the chicken broth around the chicken and sweet potatoes.
  3. Cover the baking dish with aluminum foil and bake for 25 minutes.
  4. Remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
  5. Let it rest for 5 minutes before serving.
