Ingredients
  

Chicken Filling
  • 2 cups cooked chicken shredded
  • 1 cup spinach fresh or frozen, chopped
  • 1 cup cream cheese softened
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Roll Up Assembly
  • 8 slices chicken breast thinly sliced
  • 1 cup parmesan cheese grated
  • 1 tablespoon olive oil for greasing

Method
 

Prepare the Filling
  1. In a mixing bowl, combine shredded chicken, spinach, cream cheese, mozzarella cheese, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
Assemble the Roll Ups
  1. Preheat the oven to 375°F (190°C).
  2. Grease a baking dish with olive oil.
  3. Take a slice of chicken breast and place a spoonful of the filling at one end. Roll it up tightly and secure with a toothpick. Repeat with remaining chicken slices and filling.
Bake the Roll Ups
  1. Place the roll ups seam-side down in the prepared baking dish. Sprinkle grated parmesan cheese on top.
  2. Bake in the preheated oven for 25 minutes or until the chicken is cooked through and the cheese is bubbly.
  3. Remove from the oven and let cool for a few minutes before serving.

Notes

These chicken roll ups can be served with marinara sauce for dipping.
