Ingredients

Chicken Marinade
  • 1.5 pounds boneless, skinless chicken breasts cut into 1-inch cubes
  • 1 tablespoon olive oil for marinade
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried oregano
Vegetables
  • 1 bell pepper red cut into 1-inch pieces
  • 1 bell pepper green cut into 1-inch pieces
  • 1 medium onion cut into wedges
  • 1 cup zucchini sliced

Method

Marinate Chicken
  1. In a mixing bowl, combine olive oil, soy sauce, honey, minced garlic, paprika, salt, black pepper, and oregano. Mix well.
  2. Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Prepare Skewers
  1. Soak wooden skewers in water for at least 30 minutes to prevent burning.
  2. Thread marinated chicken, bell peppers, onion, and zucchini onto the skewers, alternating between chicken and vegetables.
Grill Skewers
  1. Preheat the grill to medium-high heat.
  2. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
Serve
  1. Remove skewers from the grill and let them rest for a few minutes before serving.
  2. Serve with your favorite dipping sauce or side salad.
