Ingredients
  

Taco Filling
  • 2 cups rotisserie chicken, shredded Use store-bought for convenience.
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, canned or frozen If frozen, thaw before using.
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 cup cheddar cheese, shredded For topping.
Taco Toppings
  • 1 cup lettuce, shredded
  • 1 medium tomato, diced
  • 1/2 cup sour cream Optional.
  • 1/4 cup cilantro, chopped Optional.
  • 1 lime juiced For serving.
Taco Shells
  • 8 small corn tortillas Warm before serving.

Method
 

Prepare the Filling
  1. In a skillet over medium heat, combine the shredded rotisserie chicken, black beans, corn, cumin, and chili powder. Stir until heated through, about 5-7 minutes.
Warm the Tortillas
  1. In a separate skillet, warm the corn tortillas for about 30 seconds on each side until pliable.
Assemble the Tacos
  1. Place a portion of the chicken filling on each tortilla. Top with shredded lettuce, diced tomato, cheddar cheese, and a dollop of sour cream if desired.
  2. Sprinkle with chopped cilantro and squeeze fresh lime juice over the top before serving.
