Ingredients
  

Cookie Dough
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
Cinnamon Sugar Coating
  • 1/2 cup granulated sugar
  • 1 tablespoon cinnamon

Method
 

Prepare Cookie Dough
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Shape and Bake Cookies
  1. Using a cookie scoop, drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. In a small bowl, mix the granulated sugar and cinnamon for the coating.
  3. Roll each cookie ball in the cinnamon sugar mixture to coat.
  4. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  5. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For extra flavor, you can add chocolate chips or drizzle melted chocolate on top of the cookies after baking.
