Ingredients
  

Salad Ingredients
  • 2 medium cucumbers peeled and diced
  • 3 medium tomatoes diced
  • 1 cup red onion finely chopped
  • 1 cup feta cheese crumbled
  • 1 tablespoon fresh parsley chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dijon mustard
  • 1 clove garlic minced
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Method
 

Prepare the Vegetables
  1. Peel and dice the cucumbers into bite-sized pieces.
  2. Dice the tomatoes and finely chop the red onion.
  3. In a mixing bowl, combine the diced cucumbers, tomatoes, red onion, and crumbled feta cheese.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, dijon mustard, minced garlic, salt, and black pepper until well combined.
Combine and Serve
  1. Pour the dressing over the salad mixture and toss gently to combine.
  2. Garnish with chopped parsley and serve immediately.

Notes

This salad is best served fresh but can be stored in the refrigerator for up to 2 days. For added flavor, consider adding olives or avocado.
