Ingredients
  

Salad Ingredients
  • 2 medium cucumbers sliced
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1 tablespoon fresh dill chopped
Dressing Ingredients
  • 3 tablespoons olive oil
  • 2 tablespoons white vinegar
  • 1 teaspoon honey optional
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare the Vegetables
  1. Wash the cucumbers and cherry tomatoes thoroughly.
  2. Slice the cucumbers into thin rounds and halve the cherry tomatoes.
  3. Thinly slice the red onion.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, white vinegar, honey (if using), salt, and black pepper.
Combine Salad
  1. In a mixing bowl, combine the sliced cucumbers, cherry tomatoes, red onion, and chopped dill.
  2. Pour the dressing over the salad and toss gently to combine.
Serve
  1. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.

Notes

This salad can be made a few hours in advance. Just keep it refrigerated until serving.
