Method
Prepare the Filling
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine sliced peaches, 1/2 cup of sugar, lemon juice, cinnamon, and cornstarch. Mix well and set aside.
Make the Topping
- In another bowl, whisk together flour, baking powder, salt, and remaining 1/2 cup of sugar.
- Stir in melted butter, milk, and vanilla extract until just combined.
Assemble and Bake
- Pour the peach mixture into a greased baking dish.
- Drop spoonfuls of the topping mixture over the peaches.
- Bake in the preheated oven for 30 minutes or until the topping is golden brown.
- Let cool for a few minutes before serving.
