Ingredients
  

For the biscuits
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 0.5 tbsp granulated sugar
  • 0.5 tsp salt
  • 0.5 cups unsalted butter cold and cubed
  • 0.75 cups milk whole or 2%
For the strawberry filling
  • 1 pint fresh strawberries sliced
  • 2 tbsp granulated sugar for macerating strawberries
For the whipped cream
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Method
 

Prepare the strawberries
  1. In a bowl, combine sliced strawberries with granulated sugar. Toss gently and let sit for about 15 minutes to macerate.
Make the biscuits
  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, whisk together flour, baking powder, sugar, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the milk until just combined.
  5. Turn the dough onto a floured surface and knead gently. Pat into a 1-inch thick round.
  6. Cut into rounds and place on a baking sheet.
  7. Bake for 12-15 minutes or until golden brown.
Make the whipped cream
  1. In a mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
Assemble the shortcakes
  1. Slice the biscuits in half horizontally.
  2. Layer the bottom half with macerated strawberries and a dollop of whipped cream.
  3. Top with the other half of the biscuit and add more strawberries and whipped cream on top.
