Ingredients
  

Bread Dough
  • 3 cups freshly milled flour Whole wheat or all-purpose
  • 1 cup warm water About 110°F
  • 2 tablespoons honey Or sugar
  • 1 packet active dry yeast
  • 1 teaspoon salt
  • 2 tablespoons olive oil
Pancake Batter
  • 1 cup freshly milled flour Whole wheat or all-purpose
  • 1 cup milk Or plant-based milk
  • 1 large egg
  • 2 tablespoons melted butter Or coconut oil
  • 2 tablespoons sugar Optional
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract Optional
Pasta Dough
  • 2 cups freshly milled flour Semolina or all-purpose
  • 3 large eggs Room temperature
  • 1 teaspoon salt
  • 1 tablespoon olive oil Optional

Method
 

Bread
  1. In a mixing bowl, combine warm water, honey, and yeast. Let it sit for 5 minutes until frothy.
  2. Add freshly milled flour, salt, and olive oil to the yeast mixture. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth.
  4. Place the dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
  5. Preheat the oven to 375°F (190°C). Shape the dough into a loaf and place it in a greased loaf pan.
  6. Bake for 25-30 minutes until golden brown and sounds hollow when tapped.
Pancakes
  1. In a mixing bowl, whisk together freshly milled flour, baking powder, and sugar.
  2. In another bowl, mix milk, egg, melted butter, and vanilla extract.
  3. Combine the wet and dry ingredients until just mixed; do not overmix.
  4. Heat a skillet over medium heat and grease lightly. Pour 1/4 cup of batter for each pancake.
  5. Cook until bubbles form on the surface, then flip and cook until golden brown.
Pasta
  1. On a clean surface, make a mound with freshly milled flour and create a well in the center.
  2. Add eggs, salt, and olive oil into the well. Gradually mix the flour into the eggs until a dough forms.
  3. Knead the dough for about 10 minutes until smooth. Wrap in plastic and let rest for 30 minutes.
  4. Roll out the dough with a rolling pin or pasta maker to desired thickness, then cut into shapes.
  5. Cook the pasta in boiling salted water for 2-4 minutes until al dente.

Notes

Freshly milled flour enhances the flavor and nutritional value of baked goods. Adjust hydration as needed based on flour type.
