Method
Bread
- In a mixing bowl, combine warm water, honey, and yeast. Let it sit for 5 minutes until frothy.
- Add freshly milled flour, salt, and olive oil to the yeast mixture. Mix until a dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth.
- Place the dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
- Preheat the oven to 375°F (190°C). Shape the dough into a loaf and place it in a greased loaf pan.
- Bake for 25-30 minutes until golden brown and sounds hollow when tapped.
Pancakes
- In a mixing bowl, whisk together freshly milled flour, baking powder, and sugar.
- In another bowl, mix milk, egg, melted butter, and vanilla extract.
- Combine the wet and dry ingredients until just mixed; do not overmix.
- Heat a skillet over medium heat and grease lightly. Pour 1/4 cup of batter for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
Pasta
- On a clean surface, make a mound with freshly milled flour and create a well in the center.
- Add eggs, salt, and olive oil into the well. Gradually mix the flour into the eggs until a dough forms.
- Knead the dough for about 10 minutes until smooth. Wrap in plastic and let rest for 30 minutes.
- Roll out the dough with a rolling pin or pasta maker to desired thickness, then cut into shapes.
- Cook the pasta in boiling salted water for 2-4 minutes until al dente.
Notes
Freshly milled flour enhances the flavor and nutritional value of baked goods. Adjust hydration as needed based on flour type.
