Ingredients
  

Dry Ingredients
  • 2 cups freshly milled flour whole wheat or all-purpose
  • 2 tbsp sugar optional for sweetness
  • 1 tbsp baking powder
  • 1 tsp salt
Wet Ingredients
  • 1 cup milk or plant-based milk
  • 2 large eggs beaten
  • 1 tsp vanilla extract
  • 4 tbsp melted butter or oil

Method
 

Prepare the Batter
  1. In a mixing bowl, whisk together the freshly milled flour, sugar, baking powder, and salt.
  2. In another bowl, combine the milk, beaten eggs, vanilla extract, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
Cook the Pancakes
  1. Preheat a griddle or frying pan over medium heat and lightly grease it.
  2. Pour 1/4 cup of batter onto the griddle for each pancake.
  3. Cook until bubbles form on the surface, then flip and cook until golden brown, about 2-3 minutes per side.
Serve
  1. Serve warm with your favorite toppings such as maple syrup, fresh fruit, or yogurt.

Notes

For a thicker batter, reduce the milk slightly. You can also add blueberries or chocolate chips for extra flavor.
