Ingredients
  

Tomatoes
  • 4 medium green tomatoes sliced into 1/4 inch thick rounds
Breading
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 large eggs beaten
  • 1 cup buttermilk
Frying
  • 1 cup vegetable oil for frying

Method
 

Prepare the Tomatoes
  1. Slice the green tomatoes into 1/4 inch thick rounds and set aside.
Prepare the Breading
  1. In a mixing bowl, combine cornmeal, flour, salt, black pepper, and paprika.
  2. In another bowl, whisk together the eggs and buttermilk.
Bread the Tomatoes
  1. Dip each tomato slice into the buttermilk mixture, then dredge in the cornmeal mixture until fully coated.
Fry the Tomatoes
  1. Heat vegetable oil in a cast iron skillet over medium heat.
  2. Once the oil is hot, carefully add the breaded tomato slices in batches, frying for about 3-4 minutes on each side until golden brown.
  3. Use a slotted spoon to remove the fried tomatoes and place them on paper towels to drain excess oil.
Serve
  1. Serve the fried green tomatoes warm with your favorite dipping sauce.

Notes

For extra flavor, you can add cayenne pepper to the breading mixture for a spicy kick.
