Dough
  • 2 cups all-purpose flour
  • 1 teaspoon active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 3/4 cup warm water 110°F
  • 1 tablespoon olive oil
Toppings
  • 4 ounces goat cheese crumbled
  • 1 cup fresh spinach washed and dried
  • 1 medium red onion thinly sliced
  • 1 cup cherry tomatoes halved
  • 1 tablespoon fresh basil chopped
  • 1 tablespoon balsamic glaze for drizzling

Method
 

Prepare the Dough
  1. In a mixing bowl, combine warm water, sugar, and yeast. Let it sit for 5 minutes until frothy.
  2. Add flour, salt, and olive oil to the yeast mixture. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth.
  4. Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm place for 30 minutes.
Assemble the Pizza
  1. Preheat the oven to 475°F (245°C) with a pizza stone inside if using.
  2. Roll out the risen dough on a floured surface to your desired thickness.
  3. Transfer the rolled dough to a baking sheet or pizza peel if using a stone.
  4. Spread the spinach evenly over the dough, followed by the sliced red onion and halved cherry tomatoes.
  5. Crumble the goat cheese over the top and sprinkle with chopped basil.
  6. Bake in the preheated oven for 15-20 minutes until the crust is golden and cheese is bubbly.
  7. Remove from the oven and drizzle with balsamic glaze before slicing.

Notes

Feel free to add other toppings such as olives or artichokes for extra flavor.
