Ingredients

Dough
  • 2 cups all-purpose flour plus extra for dusting
  • 1 packet active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 3/4 cup warm water about 110°F
  • 1 tablespoon olive oil
Toppings
  • 6 ounces goat cheese crumbled
  • 1 cup fresh spinach washed and dried
  • 1 medium red onion thinly sliced
  • 1 cup cherry tomatoes halved
  • 1 tablespoon fresh basil chopped
  • 1 tablespoon balsamic glaze for drizzling

Method

Prepare the Dough
  1. In a mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
  2. Add flour, salt, and olive oil to the yeast mixture. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour.
Assemble the Pizza
  1. Preheat the oven to 475°F (245°C) and place a pizza stone inside to heat.
  2. Once the dough has risen, punch it down and roll it out on a floured surface to your desired thickness.
  3. Transfer the rolled dough to a baking sheet or pizza peel. Spread the spinach evenly over the dough.
  4. Top with crumbled goat cheese, sliced red onion, and halved cherry tomatoes.
  5. Carefully transfer the pizza to the preheated pizza stone in the oven. Bake for 12-15 minutes until the crust is golden brown.
  6. Remove from the oven and sprinkle with fresh basil and drizzle with balsamic glaze before serving.
