Preparation
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the rolled oats, chopped nuts, dried fruit, brown sugar, and cinnamon.
- In a small saucepan over low heat, combine honey and peanut butter until melted and smooth. Remove from heat and stir in vanilla extract.
- Pour the honey mixture over the dry ingredients and mix until everything is well coated.
- Press the mixture firmly into a greased baking pan.
Baking
- Bake in the preheated oven for 20 minutes or until golden brown.
- Remove from oven and let cool completely in the pan before cutting into bars.

Store the granola bars in an airtight container for up to a week.
