Ingredients
  

Meatball Mixture
  • 1 lb ground chicken
  • 1/2 cup breadcrumbs preferably whole wheat
  • 1/4 cup feta cheese crumbled
  • 1 large egg
  • 2 cloves garlic minced
  • 1 tbsp fresh parsley chopped
  • 1 tbsp fresh dill chopped
  • 1 tsp oregano dried
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For Serving
  • 1 cup tzatziki sauce for dipping
  • 1 cup cucumber sliced
  • 1 cup cherry tomatoes halved

Method
 

Prepare the Meatballs
  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine ground chicken, breadcrumbs, feta cheese, egg, minced garlic, parsley, dill, oregano, salt, and black pepper.
  3. Mix until well combined, but do not overmix.
  4. Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
Bake the Meatballs
  1. Bake in the preheated oven for 20 minutes, or until the internal temperature reaches 165°F (74°C).
  2. Remove from the oven and let them cool slightly before serving.
Serve
  1. Serve the meatballs with tzatziki sauce, cucumber slices, and cherry tomatoes.

Notes

These meatballs can be made ahead of time and frozen for later use. Just reheat in the oven before serving.
