Ingredients
  

Pasta
  • 12 oz spaghetti or any pasta of choice
Green Sauce
  • 2 medium avocados ripe, pitted and peeled
  • 1 cup fresh cilantro packed
  • 1 jalapeño seeded and chopped adjust for spice preference
  • 2 cloves garlic minced
  • 1 lime juiced
  • 1/4 cup olive oil
  • 1/2 tsp salt adjust to taste
  • 1/4 tsp black pepper freshly ground
Toppings
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup crumbled queso fresco
  • 1/4 cup sliced green onions

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
  2. Drain the pasta in a colander and set aside.
Prepare the Green Sauce
  1. In a blender, combine the avocados, cilantro, jalapeño, garlic, lime juice, olive oil, salt, and black pepper.
  2. Blend until smooth and creamy. Adjust seasoning if necessary.
Combine and Serve
  1. In a large skillet over medium heat, combine the cooked spaghetti with the green sauce. Toss to coat evenly.
  2. Serve immediately, topped with cherry tomatoes, queso fresco, and green onions.
