  • 1 lb ground beef preferably lean
  • 2 medium sweet potatoes peeled and diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup bell pepper chopped
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp olive oil

Method
 

Preparation
  1. Peel and dice the sweet potatoes into small cubes.
  2. Chop the onion and bell pepper, and mince the garlic.
Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Add chopped onion and bell pepper to the skillet, sauté for 3-4 minutes until softened.
  3. Stir in minced garlic and cook for an additional 1 minute.
  4. Add ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  5. Season with cumin, paprika, salt, and black pepper, stirring to combine.
  6. Add diced sweet potatoes to the skillet, mixing well with the beef and vegetables.
  7. Cover the skillet and reduce heat to low. Cook for 15-20 minutes, stirring occasionally, until sweet potatoes are tender.

Notes

Serve warm, optionally garnished with fresh herbs or avocado.
