Preparation
- Peel and dice the sweet potatoes into small cubes.
- Chop the onion and bell pepper, and mince the garlic.
Cooking
- Heat olive oil in a skillet over medium heat.
- Add chopped onion and bell pepper to the skillet, sauté for 3-4 minutes until softened.
- Stir in minced garlic and cook for an additional 1 minute.
- Add ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
- Season with cumin, paprika, salt, and black pepper, stirring to combine.
- Add diced sweet potatoes to the skillet, mixing well with the beef and vegetables.
- Cover the skillet and reduce heat to low. Cook for 15-20 minutes, stirring occasionally, until sweet potatoes are tender.
Notes
Serve warm, optionally garnished with fresh herbs or avocado.
