Prepare the Chicken
- If using raw chicken, cook it in a pot of boiling water for about 15-20 minutes until fully cooked. Shred the chicken once cooled.
Mix the Ingredients
- In a large mixing bowl, combine the shredded chicken, Greek yogurt, diced celery, halved grapes, chopped red onion, and sliced almonds.
- Add the lemon juice, dijon mustard, salt, and black pepper. Mix well until all ingredients are evenly coated.
Serve
- Garnish with chopped parsley and serve chilled or at room temperature.
Notes
This salad can be stored in the refrigerator for up to 3 days. Serve it on a bed of greens or in a wrap for a complete meal.
