Ingredients
  

Chicken Salad
  • 2 cups cooked chicken breast, shredded can use rotisserie chicken
  • 1 cup Greek yogurt plain, non-fat or low-fat
  • 1 cup celery, diced
  • 1 cup red grapes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup almonds, sliced optional
  • 2 tablespoons fresh parsley, chopped for garnish
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Chicken
  1. If using raw chicken, cook it in a pot of boiling water for about 15-20 minutes until fully cooked. Shred the chicken once cooled.
Mix the Ingredients
  1. In a large mixing bowl, combine the shredded chicken, Greek yogurt, diced celery, halved grapes, chopped red onion, and sliced almonds.
  2. Add the lemon juice, dijon mustard, salt, and black pepper. Mix well until all ingredients are evenly coated.
Serve
  1. Garnish with chopped parsley and serve chilled or at room temperature.

Notes

This salad can be stored in the refrigerator for up to 3 days. Serve it on a bed of greens or in a wrap for a complete meal.
