Prepare the Candied Walnuts
- In a saucepan, combine sugar, water, and salt. Bring to a boil over medium heat.
- Add walnuts and stir to coat. Continue boiling for about 5 minutes until the mixture thickens.
- Remove from heat and spread walnuts on a baking sheet to cool.
Prepare the Shrimp
- In a mixing bowl, combine cornstarch and flour. Dip shrimp in the beaten egg, then coat with the flour mixture.
- Heat vegetable oil in a large skillet over medium-high heat. Fry shrimp in batches until golden and crispy, about 2-3 minutes per side.
- Remove shrimp and drain on paper towels.
Make the Honey Sauce
- In a bowl, whisk together honey, mayonnaise, sweetened condensed milk, and lemon juice until smooth.
Combine and Serve
- In a large bowl, combine fried shrimp with the honey sauce and toss to coat.
- Top with candied walnuts and serve immediately.
Notes
For extra flavor, you can add a pinch of cayenne pepper to the shrimp coating mixture.
