Prepare the Filling
- In a bowl, mix the softened cream cheese, shredded cheddar cheese, and shredded mozzarella cheese until well combined.
- Fold in the sliced jalapeños until evenly distributed.
Assemble the Sandwiches
- Spread a generous amount of the cheese mixture onto one slice of bread.
- Top with another slice of bread to form a sandwich.
- Repeat with the remaining bread and filling to make 4 sandwiches.
Grill the Sandwiches
- Heat a skillet over medium heat and add 1 tablespoon of butter.
- Once melted, place a sandwich in the skillet and grill for 3-4 minutes until golden brown.
- Flip the sandwich, add another tablespoon of butter to the skillet, and grill the other side for another 3-4 minutes.
- Repeat for the remaining sandwiches, adding butter as needed.
Serve
- Remove the sandwiches from the skillet and let cool for a minute before slicing.
- Serve warm and enjoy your jalapeño popper grilled cheese!
