Ingredients
  

For the Sandwich
  • 8 slices bread your choice of bread
  • 4 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 medium jalapeños sliced and seeds removed
  • 4 tbsp butter for grilling

Method
 

Prepare the Filling
  1. In a bowl, mix the softened cream cheese, shredded cheddar cheese, and shredded mozzarella cheese until well combined.
  2. Fold in the sliced jalapeños until evenly distributed.
Assemble the Sandwiches
  1. Spread a generous amount of the cheese mixture onto one slice of bread.
  2. Top with another slice of bread to form a sandwich.
  3. Repeat with the remaining bread and filling to make 4 sandwiches.
Grill the Sandwiches
  1. Heat a skillet over medium heat and add 1 tablespoon of butter.
  2. Once melted, place a sandwich in the skillet and grill for 3-4 minutes until golden brown.
  3. Flip the sandwich, add another tablespoon of butter to the skillet, and grill the other side for another 3-4 minutes.
  4. Repeat for the remaining sandwiches, adding butter as needed.
Serve
  1. Remove the sandwiches from the skillet and let cool for a minute before slicing.
  2. Serve warm and enjoy your jalapeño popper grilled cheese!
