Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
Filling
  • 1/2 cup fresh key lime juice
  • 1 can sweetened condensed milk 14 oz
  • 2 large egg yolks
  • 1 teaspoon lime zest
Topping
  • 1 cup whipped cream for serving
  • 1 tablespoon lime zest for garnish

Method
 

Prepare the crust
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter.
  3. Press the mixture into the bottom of a 9x9 inch baking pan to form an even layer.
  4. Bake for 10 minutes, then remove from the oven and let cool.
Make the filling
  1. In a separate bowl, whisk together the key lime juice, sweetened condensed milk, egg yolks, and lime zest until smooth.
  2. Pour the filling over the cooled crust.
  3. Bake for an additional 15-20 minutes, until set but still slightly jiggly in the center.
  4. Remove from the oven and let cool to room temperature before refrigerating for at least 2 hours.
Serve
  1. Cut into bars and top with whipped cream and additional lime zest before serving.

Notes

For best results, use fresh key limes for the juice and zest.
