Method
Prepare the crust
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter.
- Press the mixture into the bottom of a 9x9 inch baking pan to form an even layer.
- Bake for 10 minutes, then remove from the oven and let cool.
Make the filling
- In a separate bowl, whisk together the key lime juice, sweetened condensed milk, egg yolks, and lime zest until smooth.
- Pour the filling over the cooled crust.
- Bake for an additional 15-20 minutes, until set but still slightly jiggly in the center.
- Remove from the oven and let cool to room temperature before refrigerating for at least 2 hours.
Serve
- Cut into bars and top with whipped cream and additional lime zest before serving.
Notes
For best results, use fresh key limes for the juice and zest.
