Ingredients
  

Dressing Base
  • 1 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice about 2 lemons
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • 1 teaspoon honey optional for sweetness
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground

Method
 

Mixing the Dressing
  1. In a mixing bowl, combine the fresh lemon juice, Dijon mustard, minced garlic, honey, salt, and black pepper.
  2. Whisk the ingredients together until well combined.
  3. Slowly drizzle in the olive oil while continuing to whisk until the dressing is emulsified.
  4. Taste and adjust seasoning if necessary.
  5. Transfer the dressing to a jar with a lid for storage.

Notes

This dressing can be stored in the refrigerator for up to a week. Shake well before using.
