  • 2 cups diced mango ripe
  • 1 cup diced red bell pepper
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 medium jalapeño pepper seeded and minced
  • 1 lime juiced
  • 1/2 teaspoon salt to taste

Method
 

Preparation
  1. In a mixing bowl, combine the diced mango, red bell pepper, red onion, cilantro, and jalapeño pepper.
  2. Squeeze the lime juice over the mixture and add salt to taste.
  3. Gently toss all the ingredients together until well mixed.
  4. Let the salsa sit for at least 10 minutes to allow the flavors to meld.
  5. Serve with tortilla chips or as a topping for tacos.

Notes

For a sweeter salsa, use extra ripe mangoes. Adjust the jalapeño for desired heat level.
