Ingredients
  

Rice and Vegetables
  • 1 cup long-grain white rice rinsed
  • 2 cups vegetable broth or chicken broth
  • 1 cup diced tomatoes canned or fresh
  • 1 small onion finely chopped
  • 1 clove garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt adjust to taste
  • 1 tablespoon olive oil optional
  • 1/2 cup frozen peas optional
  • 1/2 cup corn optional

Method
 

Preparation
  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In the rice cooker, combine the rinsed rice, vegetable broth, diced tomatoes, chopped onion, minced garlic, cumin, chili powder, and salt.
  3. If using, add the olive oil, peas, and corn to the mixture.
Cooking
  1. Close the rice cooker lid and set it to the 'white rice' setting or cook for about 30 minutes until the rice is tender and the liquid is absorbed.
  2. Once cooking is complete, let the rice sit for 5 minutes before opening the lid.
  3. Fluff the rice with a fork and serve warm.

Notes

Feel free to customize the recipe by adding bell peppers, jalapeños, or other vegetables as desired.
