  • 1 tablespoon baking powder
  • 1 teaspoon salt
Wet Ingredients
  • 3 large eggs
  • 1 cup extra virgin olive oil use high-quality
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 lemon zest

Method
 

Prepare the Oven and Pan
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
Mix Dry Ingredients
  1. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
Combine Wet Ingredients
  1. In another bowl, whisk together the eggs, olive oil, buttermilk, vanilla extract, and lemon zest until smooth.
Combine Mixtures
  1. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Bake the Cake
  1. Pour the batter into the prepared cake pan and smooth the top. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
Cool and Serve
  1. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Serve plain or with a dusting of powdered sugar.
