Cooking the Chicken and Vegetables
- Heat olive oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Stir in the chicken pieces and cook until browned on all sides, about 5-7 minutes.
- Add the diced bell pepper, sliced carrots, chicken broth, Italian seasoning, salt, and black pepper. Bring to a simmer.
- Cover the pot and let it cook for 15 minutes, stirring occasionally.
- Add the frozen peas and cook for an additional 5 minutes until heated through.
- Serve the chicken and vegetables over cooked rice.
