Ingredients
  

Chicken and Vegetables
  • 1 lb boneless, skinless chicken thighs cut into bite-sized pieces
  • 2 tbsp olive oil for cooking
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 medium bell pepper diced
  • 2 carrots sliced
  • 1 cup chicken broth low sodium
  • 1 cup frozen peas
  • 1 tbsp Italian seasoning
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
  • 2 cups cooked rice for serving

Method
 

Cooking the Chicken and Vegetables
  1. Heat olive oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  2. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Stir in the chicken pieces and cook until browned on all sides, about 5-7 minutes.
  4. Add the diced bell pepper, sliced carrots, chicken broth, Italian seasoning, salt, and black pepper. Bring to a simmer.
  5. Cover the pot and let it cook for 15 minutes, stirring occasionally.
  6. Add the frozen peas and cook for an additional 5 minutes until heated through.
  7. Serve the chicken and vegetables over cooked rice.
