Ingredients
  

Chicken and Vegetables
  • 1 lb boneless chicken thighs cut into bite-sized pieces
  • 1 tbsp olive oil for cooking
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 medium bell pepper diced
  • 2 carrots carrots sliced
  • 1 cup frozen peas
  • 1 cup long-grain rice rinsed
  • 2 cups chicken broth
  • 1 tbsp soy sauce optional
  • 1 tsp dried thyme
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Method
 

Cooking the Chicken
  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, sauté until translucent, about 3-4 minutes.
  2. Add the chicken pieces to the pot, season with salt, pepper, and thyme. Cook until the chicken is browned, about 5-7 minutes.
Adding Vegetables and Rice
  1. Stir in the diced bell pepper, sliced carrots, and frozen peas. Cook for another 3 minutes.
  2. Add the rinsed rice to the pot, followed by the chicken broth and soy sauce. Stir well to combine.
Cooking the Dish
  1. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20 minutes or until the rice is cooked and the liquid is absorbed.
  2. Remove from heat and let it sit covered for an additional 5 minutes before serving.
