Method
Cooking the Chicken
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, sauté until translucent, about 3-4 minutes.
- Add the chicken pieces to the pot, season with salt, pepper, and thyme. Cook until the chicken is browned, about 5-7 minutes.
Adding Vegetables and Rice
- Stir in the diced bell pepper, sliced carrots, and frozen peas. Cook for another 3 minutes.
- Add the rinsed rice to the pot, followed by the chicken broth and soy sauce. Stir well to combine.
Cooking the Dish
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20 minutes or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit covered for an additional 5 minutes before serving.
