Method
Marinate the Chicken
- In a bowl, combine soy sauce, honey, rice vinegar, and cornstarch. Add chicken pieces and marinate for at least 15 minutes.
Cook the Rice
- In a pot, bring chicken broth to a boil. Add rice, cover, and reduce heat to low. Cook for 18-20 minutes until rice is tender.
Stir-Fry the Chicken and Vegetables
- In a large skillet, heat vegetable oil over medium-high heat. Add marinated chicken and cook until browned, about 5-7 minutes.
- Add garlic, ginger, bell pepper, and snap peas. Stir-fry for another 5 minutes until vegetables are tender.
- Add pineapple chunks and stir to combine. Cook for an additional 2-3 minutes until heated through.
Combine and Serve
- Fluff the cooked rice with a fork and serve topped with the pineapple chicken stir-fry. Garnish with sliced green onions.
Notes
For added flavor, you can sprinkle sesame seeds on top before serving.
