  • 2 cans canned salmon drained and flaked
  • 1 cup bread crumbs preferably plain
  • 1 large egg beaten
  • 1 small onion finely chopped
  • 1 tablespoon fresh parsley chopped
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice freshly squeezed
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil for frying

Method
 

Prepare the Mixture
  1. In a mixing bowl, combine the flaked canned salmon, bread crumbs, beaten egg, chopped onion, parsley, Dijon mustard, lemon juice, garlic powder, salt, and black pepper.
  2. Mix well until all ingredients are thoroughly combined.
Form the Cakes
  1. Using your hands, form the mixture into patties, about 2 inches in diameter.
  2. Place the formed patties on a plate.
Cook the Salmon Cakes
  1. Heat olive oil in a frying pan over medium heat.
  2. Add the salmon cakes to the pan, cooking in batches if necessary.
  3. Cook for about 4-5 minutes on each side, or until golden brown and crispy.
Serve
  1. Remove the salmon cakes from the pan and drain on paper towels.
  2. Serve warm with your favorite dipping sauce or a side salad.

These salmon cakes can be served with tartar sauce or a squeeze of lemon for added flavor.
