Prepare the Salmon
- In a food processor, pulse the fresh salmon until finely chopped but not pureed.
Mix Ingredients
- In a mixing bowl, combine the chopped salmon, bread crumbs, beaten egg, Dijon mustard, parsley, lemon juice, garlic, salt, and pepper. Mix until well combined.
Form Cakes
- Shape the mixture into patties, about 3 inches in diameter.
Cook the Salmon Cakes
- Heat olive oil in a frying pan over medium heat. Add the salmon cakes and cook for about 4-5 minutes on each side, or until golden brown and cooked through.
Serve
- Remove from the pan and drain on paper towels. Serve warm with your favorite dipping sauce.
