Wet Ingredients
  • 3 medium ripe bananas mashed
  • 1 cup fresh strawberries chopped
  • 1 large egg beaten
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon optional

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a loaf pan with cooking spray or butter.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add the beaten egg, vegetable oil, and vanilla extract to the mashed bananas, and mix well.
Mixing Dry Ingredients
  1. In another bowl, whisk together the flour, sugar, baking soda, salt, and cinnamon.
  2. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Adding Strawberries
  1. Gently fold in the chopped strawberries into the batter.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  3. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For added flavor, consider adding chopped nuts or chocolate chips to the batter.
