Ingredients
  

Filling
  • 1 lb ground beef can substitute with turkey or plant-based meat
  • 1 cup cooked rice white or brown rice
  • 1 cup diced tomatoes canned or fresh
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded cheese cheddar or mozzarella
Peppers
  • 4 bell peppers any color

Method
 

Prepare the Peppers
  1. Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes.
Cook the Filling
  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add the chopped onion and minced garlic to the skillet and sauté until the onion is translucent.
  3. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Mix well and remove from heat.
Stuff the Peppers
  1. Spoon the beef and rice mixture into each bell pepper, packing it tightly.
  2. Place the stuffed peppers upright in a baking dish.
Bake
  1. Cover the baking dish with foil and bake for 25 minutes.
  2. Remove the foil, sprinkle shredded cheese on top of each pepper, and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Serve
  1. Remove from the oven and let cool for a few minutes before serving.
