Method
Prepare the Chicken
- In a bowl, mix olive oil, salt, and black pepper. Coat the chicken breasts with the mixture and let marinate for at least 15 minutes.
- Preheat the grill to medium-high heat.
- Grill the chicken for 6-7 minutes on each side, basting with BBQ sauce during the last few minutes of cooking.
Grill the Vegetables
- In a large bowl, toss the sliced bell peppers, zucchini, and eggplant with olive oil, salt, and black pepper.
- Place the vegetables on the grill and cook for about 5-7 minutes, turning occasionally until tender and slightly charred.
Cook the Corn
- Wrap each ear of corn in aluminum foil with a little butter and salt.
- Place the wrapped corn on the grill and cook for 15-20 minutes, turning occasionally.
Serve
- Remove everything from the grill and let it rest for a few minutes.
- Serve the grilled chicken with vegetables and corn on the cob, adding extra butter and salt to the corn if desired.
