Ingredients
  

Grilled Chicken
  • 4 pieces chicken breasts boneless and skinless
  • 1 cup BBQ sauce for basting
  • 1 tablespoon olive oil for marinating
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Grilled Vegetables
  • 1 bell pepper red sliced
  • 1 bell pepper yellow sliced
  • 2 tablespoons olive oil for drizzling
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Corn on the Cob
  • 4 ears corn husked
  • 1 tablespoon butter for serving
  • 1 teaspoon salt for serving

Method
 

Prepare the Chicken
  1. In a bowl, mix olive oil, salt, and black pepper. Coat the chicken breasts with the mixture and let marinate for at least 15 minutes.
  2. Preheat the grill to medium-high heat.
  3. Grill the chicken for 6-7 minutes on each side, basting with BBQ sauce during the last few minutes of cooking.
Grill the Vegetables
  1. In a large bowl, toss the sliced bell peppers, zucchini, and eggplant with olive oil, salt, and black pepper.
  2. Place the vegetables on the grill and cook for about 5-7 minutes, turning occasionally until tender and slightly charred.
Cook the Corn
  1. Wrap each ear of corn in aluminum foil with a little butter and salt.
  2. Place the wrapped corn on the grill and cook for 15-20 minutes, turning occasionally.
Serve
  1. Remove everything from the grill and let it rest for a few minutes.
  2. Serve the grilled chicken with vegetables and corn on the cob, adding extra butter and salt to the corn if desired.
