Salad Base
  • 4 cups mixed greens such as arugula, spinach, and romaine
  • 1 cup cherry tomatoes halved
  • 1 cucumber cucumber diced
  • 1 cup bell pepper diced, any color
  • 1 avocado avocado sliced
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey
  • 1 clove garlic minced
  • salt to taste salt
  • pepper to taste black pepper
Toppings
  • 1/4 cup feta cheese crumbled
  • 1/4 cup walnuts chopped
  • 1/4 cup fresh basil chopped

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the mixed greens, cherry tomatoes, cucumber, bell pepper, and avocado.
  2. In a separate small bowl, whisk together the olive oil, balsamic vinegar, honey, minced garlic, salt, and black pepper until well combined.
  3. Pour the dressing over the salad and toss gently to coat all the ingredients.
  4. Top the salad with feta cheese, walnuts, and fresh basil.
