Prepare the Chicken
- In a mixing bowl, combine chicken pieces with soy sauce and let marinate for 10 minutes.
- After marinating, coat the chicken pieces with cornstarch.
Cook the Chicken
- Heat vegetable oil in a large skillet over medium-high heat.
- Add the coated chicken pieces and cook until golden brown and cooked through, about 5-7 minutes.
- Remove chicken from skillet and set aside.
Prepare the Sauce
- In the same skillet, combine sugar, apple cider vinegar, ketchup, and soy sauce. Bring to a simmer.
- Stir in the cornstarch mixed with water and cook until the sauce thickens, about 2-3 minutes.
Combine Ingredients
- Add the cooked chicken, bell pepper, pineapple, onion, and broccoli to the skillet. Stir to coat with sauce.
- Cook for an additional 5 minutes until vegetables are tender.
Serve
- Serve the sweet and sour chicken over cooked rice.
