Prepare the Peanut Sauce
- In a mixing bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, lime juice, minced garlic, grated ginger, and water until smooth.
Cook the Chicken
- Heat a large skillet over medium-high heat. Add the chicken pieces and cook for about 5-7 minutes, or until browned and cooked through.
Add Vegetables
- Add the sliced bell pepper, broccoli florets, and carrots to the skillet. Stir-fry for an additional 5 minutes until the vegetables are tender-crisp.
Combine with Sauce
- Pour the peanut sauce over the chicken and vegetables. Stir well to coat everything evenly and cook for another 2-3 minutes until heated through.
Serve
- Serve the Thai peanut chicken over rice or noodles, and garnish with chopped peanuts and green onions.
Notes
For extra spice, add red pepper flakes or sriracha to the sauce.
