Should you remove the membrane on pork ribs or not? People have a strong opinion on the subject, but I wanted to test the idea and compare the smoke flavor between to parts of a rack of ribs. One has the membrane removed and the other keeps the membrane. The results? Well let's just say I didn't expect that!
