I've been looking for well aged beef for a long time and I'm not talking about dry aged beef. This is beef that had the opportunity to live a long life and build up a bunch more flavor. I compare a store bought tenderloin to "Vaca Vieja" from a farm in New Mexico. I also go over why you don't see this kind of meat at your local grocery store.
