Sushi Wings Recipe

Ingredients
- Family Pack of Whole Chicken Wings
- 2 sticks of a quality butter (Kerrygold)
- 4oz Jar Crunchy Garlic Chili Oil
- 3 Tablespoons Soy Sauce
- 3 Tablespoons Ponzu Sauce
- 1 Tablespoon Wasabi
- 1/4 cup Corn Starch
- Everything Bagel Seasoning
- Sushi Sauce or Eel Sauce
- Spicy Mayo or Chipotle Mayo

First things first, we always like to separate our wings to capitalize on all the crispiness! Once they are separated, I will lightly dust every wing with cornstarch on both sides. You want a good even coating in order to help dry the skin out and make sure you have a good crispy wing that can handle a sauce. You want the cornstarch to be applied at least 30 minutes in advance before frying. This gives you plenty of time to get the grease up to a temperature of 350-360 degrees.

While the grease is getting hot, melt 2 sticks of butter. Combine the butter, crunchy garlic chili oil, soy sauce, ponzu sauce, and wasabi. Mix well and keep the sauce warm. This will allow all of the flavors to melt together and become better.

Once the grease is ready, drop the wings in. I like to separate the drums and flats since they need different cooking times. Once the wings hit about 190-200 internal temp and they are floating, remove from the grease and allow to cool for a few minutes. While they are cooling, crank the temp up on the grease to 365-375. After the wings have cooled for a few minutes, drop them back in the grease for a second fry. Careful because some moisture will be on the outside of the wing and the grease may want to pop more than usual, but that's a good thing... That's the sound of crispy wings! After about a minute the wings are ready. Place the wings on a cooling rack in a pan once they are out of the grease.

Now it's time to sauce the wings. Simply toss the wings in a large pan or bowl, making sure to get as much of the crunchy garlic on them as possible. Once they are coated well, place them on a large platter and now it's time to dress them up and make the wings pop. Drizzly the sushi sauce and spicy mayo over the wings, making sure to hit every one of them. Top with the everything bagel season and finely chopped chives. Now it's time to enjoy the one-of-a-kind Sushi-Inspired Wings!!
